The Weekend:

We drove through beautiful Oklahoma and enjoyed the sunset, Subway sandwiches, and talking.
We were greeted by a happy mom and a barking dog at midnight.
Slept in, took naps, watched t.v., and talked around the kitchen table.
Ate meatball subs, coffee cake, brisket, curry, chicken soup, poached eggs, mini biscuits, and sheet cake.
Had lunch with our dear friends, Jeff and Quinlan. Then we walked to Starbucks and enjoyed coffee and enjoyed being able to walk to Starbucks.
Went to brother's funny comedy show. They made us laugh so hard. And those 'turtles' are all so nice.
Celebrated Grandpa's 81st birthday.
Soaked up the time away and the change of pace.
Packed the car, drove home, and stopped and ate dinner at the nicest Braum's we have ever seen.

Weekend Away:

We have lived here for about 9 months. Since that time, if there has been a group here Doug has worked every weekend. The only weekends we have had off were due to bad weather and holidays. This weekend is different though. We are leaving tonight to spend some very much needed time away and time with family. We are so excited to be away together in the comforts of the Grandparents home. Things I am excited for:

- The five hour drive to and from
- King's sized bed
- Hot Tub
- Breakfast [Grandma's breakfast are the best!]
- Laughing at Brother Greg and his funny friends

Lately:

- I have been sneezing my head off. I feel like I am walking around in a tunnel. Thank you very much Oklahoma allergies.

- Doug has been up around 5:00 am every morning to get down to the kitchen to make breakfast. The group that is here is a work-crew youth group from Minnesota. They like early breakfasts.

- Maxwell made me more mad then he ever has before. Poop was involved.

- I did not cook anything all week. Not even a bowl of cereal. This is what happens when there are meals in the dining hall every single meal this week. I am looking forward to next week of no-meals in the dining hall and cooking some at home.

- My family is global right now. On Sunday I will have a sister in China, and brother in Germany, and two parents and a brother and a sister in Turkey.

- Last night Doug and I went into town to get hot dogs. He ordered the New York hot dog and I ordered the Chicago hot dog. We each ate half of ours and then we switched. I like doing things like this with Doug.

Jealous:

So, the majority of my family members are currently in Germany visiting Brother Andrew. When I was looking through the pictures today, I was filled with an intense feeling of jealousy. Don't worry it was the okay kind of jealousy. I just wish so badly that Doug and I were in those photos with them on this fun adventure.

Letters:

Dear Husband,
You have been wearing your workout clothes more, due to the intense church league basketball your a part of. Let it be known: I love your gym clothes, your pulled up socks, and your over sized 'street' shoes.

Dear Mexican Food,
Last week we kept eating Pizza. This week we keep eating you.

Dear Wood Stove,
I really loved you for the first part of winter. You were so cozy and warm. But I must say, I am rather excited for this warmer weather. I am getting a little tired of wood chips everywhere and having to vacuum up ash every week. Hopefully we will fall in love again next winter.

Braised Short Ribs and Creamy Goat Cheese Polenta

Each week Doug and I try to ask each other a specific thing that we can do for each other. This week I asked him if he would cook dinner with me. He agreed and we decided to make a semi-fancy dinner. We went to multiple grocery stores to get all the ingredients [because small town America does not have the best grocery stores]. We settled on PW's Braised Short Ribs and Creamy Goat Cheese Polenta. The star of this meal is the meat. It was so tender and full of flavor. And it smelled so great when we pulled it out of the oven. The polenta was good as well, just not the star.
